Chocolate makers are now turning to chocolate tempering machines rather than doing the tempering manually, primarily because the classic method is a very complicated procedure that requires patience. This machine is programmed to make chocolates tempered accurately.

Although new innovations in chocolate making are coming out, there are still chocolatiers who prefer using the classic way of chocolate tempering such as tabliering. Tabliering, originated from France, this is usually done by melting chocolate and let it cool down over the surface of a marble slab.

When using tabliering method, make sure that you keep the temperatures accurate at all times and always see to it that the equipment and the place of work is free of any moisture.
Chocolates are very sensitive to moisture; it can create a condition which is called seizing. It is a condition where chocolates become real hard and useless for any kind of dipping and molding. This condition can also occur when chocolates experiences an increase or decrease in temperature.

In starting the process of tabliering, you will need a pound of chocolate, chopping board, knife, mixing bowl, spatula, thermometer, and cookie sheet. Make sure that all equipments are dry by patting them with a paper towel.

Cut the chocolates into strip, using your knife and put it into the double boiler pan. Once the water has boiled, lower the heat and stir the chocolate until it melts in the temperature of 115F; this is, of course, depending on the type of chocolate that you are going to make. Once you have reached the right temperature, transfer the chocolate in the mixing bowl. The chocolate should clearly flow and must be free of any lumps.

Pour 2/3 of the chocolate over the surface of the marble slab and let it cool down in the temperature of 82F, by simply spreading, scraping and folding it. Always remember that the temperature is very vital and you have to be always in the look out, make sure that the temperature is 100F

Once you are sure that you have reached the proper temperature, it is now time to stir in the rest of the chocolate until the whole of the mush have the same cooling temperature. You can now start reheating the mush, with the right temperature, such as 90F for dark chocolates, 88F for semi-sweet and 84F for white chocolate. Dip the end of the spatula in the chocolate mush and let it stay for five minutes, if you notice the chocolate hardening and glistening around the its tip, then you can be sure that you have performed the right tempering process and you can now proceed to the next step which is the dipping and molding stage.

Make sure that you check on chocolate temperatures every time so that you will not lose the temper of the chocolates.
